Baked African Yam Fries, Sauteed Shrimp, Baked black Cod with Salsa

 

Hello everybody!  This dish is African inspired.  Fantastic African street food. Growing up in Africa in Accra Ghana.  Many times you will find me on the street at Osu or Circle buying fry yams, fish and pork. Delicious! Yummy!

INGREDIENTS

 

  • 2 pounds African yam or 3 sweet potatoes, cut into fries size
  • 2 pound black cod
  • 25 prawns
  • 5 tablespoon coconut oil
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, each cut into 2
  • 1 medium size red onion minced
  • 3 tablespoon parsley minced
  • 3 garlic cloves minced
  • 2 teaspoon mix spices, ground coriander, cayenne pepper, ginger powder, and garlic powder
  • 1 tablespoon cayenne pepper
  • Handful of fresh thyme sprigs
  • 1 tablespoon diced rosemary
  • 1 tablespoon diced red pepper
  • 1 tablespoon ground ginger

 

Directions
Soak the yams in water and salt for about 5 minutes.  Drain the water and dry the yams in colander.  In a bowl,  sprinkle yams with rosemary, season with mix spices.   In pan over medium heat, add 2 tablespoon coconut oil.  Add the yams.  Make sure the yams are all coated in the oil.  Cook for 2 minutes.  Into 400 degrees preheated oven for 10 minutes.  Lower heat to 350 for about 35 minutes.  In about 17 minutes into baking,  turn the yams over.  Cook until nice and tender inside and crispy on the outside.   On medium heat, in pan add one tablespoon coconut oil.  Add garlic, cooked 20 seconds, take off heat.  Gently Mix in yams, season with salt if needs it add pepper to taste.

 

Season, cod fish, shrimp with coriander,  salt and black pepper.  In a pan over medium heat.  Add one tablespoon coconut oil.  Add fish, cooked on skin side for 3 minutes, turn it on the other side, add shrimp and thyme.  Cook on meduim heat for about 4 minutes.

 

In a pan over medium heat,  add the rest of the coconut oil.  Add onions,  cook for 1 minute.  Add ginger,cook for 30 seconds.  Add tomatoes, cayenne pepper, fresh red pepper, salt and black pepper to taste.  Cooked for 1 minute.  Take it off heat.  Add the oil to the sauce. Sprinkle the food with parsley.  Garnish and serve. Enjoy and stay healthy!

 

NOTES.  You can use any yams or fish you like.  Also watch out for the pepper.  Any salsa will do.
