“Taste Africa in Style” Baked Sardines, Radish, Peanut Butter Sauce

Baked Sardines, Radish, Peanut Butter Sauce

 

Yield:    4

INGREDIENTS
  • 14 radishes
  • 1 tablespoon olive oil
  • 1 onion, cut into 4
  • Few chives
  • 1/2 lemon
  • 8 sardines cleaned
  • 1/2 ground peanut
  • 2 large tomatoes ground
  • 1/2 inch ginger ground
  • 2 cloves garlic ground
  • 2 tablespoon cayenne pepper
  • 1 large red onion ground
  • 1 teaspoon coriander ground
  • 1 teaspoon thyme
  • 4 cloves ground
  • Some fresh chives
  • Salt and black pepper to taste

 

DIRECTIONS
In a pot over medium heat. Combine the peanut, tomatoes, cayenne, garlic, tomatoes and ground ginger.  Stir constantly for 2 minutes.

 

Add about 5 cup of water, coriander, thyme, ground cloves, salt and black pepper to taste.  Stir and lower heat. Cook for about 35 minutes to 40 minutes.

 

In aluminum foil,  Add fish, cut onion, chives, olive oil, salt and black pepper to.  Close the foil and into preheated 430 degrees oven.   After 5 minutes,  lower the heat to 350. Cook for about another 15 minutes.  Take it out squeeze lemon juice onto fish.

 

In a steamer over high heat. Add the radishes.  Lower heat to low.  Steam the radishes for 15 minutes.  Delicious. You are ready to eat. Enjoy and stay healthy!

 

NOTES: make sure you stir the peanut sauce constantly.  Also add more pepper or less.
