South African Chicken and Apricot Kebabs with Green Bean Mash
These kebabs are delicious, healthy, and fantastic!
 

 

INGREDIENTS

 

 
South African Chicken and Apricot Kebabs:
  • 2 1/2  or 3 pound boneless chicken breast, skin off, cut into 4 inch chunks.
  • 3 garlic cloves, diced
  • 1 bay leaves
  • 2 1/2 tablespoon olive oil
  • 1 fresh tomatoes chopped
  • 1 teaspoon curry powder
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon grind coriander
  • 1 onion diced
  • 1 large red onion, cut into 3cm
  • About 34 dry apricot
  • 1/2 inch fresh ginger
  • 1 teaspoon cayenne pepper powder
  • 1 fresh small lemon juice
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • Skewers

 

Mashed Green Beans:

  • 3 pound green beans, cut cross-wise into pieces.
  • 1 red  onion diced
  • 1 sweet potatoes peeled and sliced
  • 1 green pepper diced
  • 1 teaspoon ground fenugreek
  • 1 tablespoon coconut oil
  • 1 teaspoon grind coriander
  • Salt and pepper to taste
 

 

 

 

DIRECTIONS
 

 

Mashed Green Beans:
 
In a pan over medium heat add the oil and onions then saute for 2 minutes.  Add garlic,  pepper, fenugreek, and salt and pepper to taste.  Saute for about 1 minute.  Take it off the heat and set aside.
 

 

In a pot over medium heat boil the green beans and sweet potatoes until soft.  Drain off the water.
 

 

In a mortar, roughly mash the green beans and sweet potatoes together.  We want a texture in the mash.  Add the onion sauce then mix everything together.  Add salt and black pepper to taste.
 

 

Note: You can also blend the green beans mixture in a blender.
 

 

 

 

Kebabs:
 
In a pan over medium heat, add oil and onion, then saute for 1 minute.  Add tomatoes, garlic,  ginger, cumin, coriander,  turmeric, cayenne pepper, and bay leaf. Cook for about one minute.  Add 1 cup of water then on low heat cook for 2 minutes.  Take it off the heat and take the bay leaf out.  Set aside until cool.
 

 

Put the mixture in a blender, add lemon juice, then blend. Put the chicken and apricots into a bowl and pour the mixture over the chicken and apricots.  Add salt and black pepper to taste.  Mix everything together.   Marinade in the refrigerator for about 30 minutes to 1 Hour or overnight if possible.
 

 

Add the cut onions to the chicken.  Make sure its all coated. Thread skewers into the chicken, apricots, and onions.
 

 

Preheat grill or cook over coals.  Put a lightly coat of oil on the grill. Grill your kebab.  Garnish and serve with the green beans.
 

 

NOTE:  You can also add other vegetables of your taste to the kebab. You can do without the cayenne in the kebab if needed.  You can also blend the green beans mixture in a blender.
